Skinny Funfetti Cupcakes

So I have a confession to make. I don’t know how to frost a cupcake correctly.

I have tried everything. Plastic baggies with the end cut off, special gadgets from Sur La Table, squeeze bottles and more. I can never get that perfect, round circle that everyone seems to be able to do so effortlessly.

This is one of the main reasons why I don’t make cupcakes very often. So please excuse the crappy frosting on top of these cupcakes. They still taste delicious and you can decorate them however you like.

These cupcakes are only 2 ingredients! Cake mix and diet soda. The frosting is a mix of cool whip and fat-free Jello instant pudding. They are light, fluffy and you won’t feel guilty eating 2 or 3 as they are only 110 calories each!

Skinny Funfetti Cupcakes
Makes 24 cupcakes

1 package Pillsbury Funfetti Cake Mix
1 (12 ounce) can Sprite Zero

Frosting:
1 (8 ounce) container of Lite or Fat Free Cool Whip
1 (1.5 ounce) package fat free vanilla Jello instant pudding

1. Preheat oven to 350 F. Line 24 cupcake tins with paper liners. In a large bowl, combine cake mix and Sprite together. Continue to mix until the batter is smooth without any lumps. Pour approximately 1/4 cup of batter into every cupcake wrapper.
2. Bake at 350 degrees for 20 minutes. Let cool before frosting.
3. In a mixing bowl, add Cool Whip and pudding. Mix with a whisk by hand or an electric hand mixer until smooth. Spread over cooled cupcakes.

Haley, first and foremost; love the new look of your page, and second, these sound and look absolutely delicious! I mean is it possible to ever go wrong when your talking about funfetti anything?? :)

I’ve always been curious to try this Haley! The diet sprite/cake mix thing. So intriguing! And the pudding and cool whip frosting – I love that too!!

They turned out really good! I want to experiment more with chocolate cake and diet soda too!
